      Grab them by the gill plates and the tail. GRAB THEM LIKE YOU MEAN IT. Never grab a fish by the gills unless your planning in keeping them.

      You can either pin them behind the head or hold the front part of their gills. The first one is preferable, but it won't work on anything much over 36".

      Based on the pic looks like white is right, unless there is a small spine at the front that you can't see
