  Bleed them out when you land them. Gut and skin it ASAP. Iyou cut off the fins put one foot on the head and pull out the meat. Cut into serving size pieces and soak ...more overnight in whole milk. Coat with bread crumbs or corn flour and deep fry.

This is the biggest lady fish I've caught so far, it danced on the water like a small tarpon. Great fun catching this one. It hit a frozen shrimp and fought ...more like something twice its size.
