Scott I got as much meat off as I could. Put some celery, onions, green peppers that are diced into food processor. Then throw in the fish, re blend. I then added ...more raw eggs, panko bread crumbs, cayenne pepper, salt, black pepper and chopped garlic. Mix with spoon. Make thinner patties and place on wax paper on a cookie sheet in the freezer for like 20 minutes. Then coat with panko bread crumbs and parmesan cheese on the outside. Heat cast iron skillet and brown butter. Fry until crispy on both sides. They are fantastic!
