    This was at Big Laurel Creek in Madison, NC. Right by Asheville. My first time fly fishing and I got the hang of it quickly. Caught this red horse first.

      It had a dark flavor, similar to Crappie.

      I blackened it. It was chewy, and tough. It didn't flake. I didn't care for it much, and I can see why most people make fish cakes, or some other type ...more of broken down preparation with this meat. @iminlikewithyoo
