Decent haul, how about next time try blackening them. Ingredients

1 tablespoon ...more ground dried thyme
      1 teaspoon ground black pepper
      1 teaspoon cayenne pepper

      1 teaspoon dried oregano

      Directions
1Combine the paprika, garlic powder, onion powder, thyme, black pepper, cayenne pepper, basil, and oregano in a bowl until evenly mixed. Store in an airtight container in a cool, dry place.

Pat fillets dry, and coat in seasoning
      Hot pan, oil or butter

Not sure if you're frying the filets....but if so, try Aunt Jemima pancake mix, then roll in egg/milk, then back to the pancake mix....fry in peanut oil at 350 ...more yum yum. ( That's awesome for shrimp too!)
