  5-10 pounds, meat is most tender at this time. Anything over that you get more meat, but it is very tuff and doesn't taste so good.

  @m_cizek I have not caught any flatheads. What would you suggest as the best "eater" size? Thanks.

  @jake11 agreed, once they get that big I always put them back to fight another day.... They don't taste good at all once they get that big.
