Prepping salmon for smoking. This is the air drying process after brining. Crucial to moist smoked salmon. This is when the pellicle on the meat is formed.

      Great though. Hardest part is keeping the temperature down on a woodfire smoker.

      @matt The pellicle is a sticky layer on the outside that forms and it seals the moisture inside. It's also where they say the smoke flavor sticks too. I don't ...more let mine form too much. It turned out
