Finally got three gars. I'm curious how they taste like so I fileted two of them. The backstraps look good and I know their eggs are toxic.

  I boiled these backstraps in pieces and dipped them with seafood sauce. Gar meat is like a chunk of crabmeat with the texture of lobster. It doesn't taste like ...more fish meat and is boneless.
